Among other things, the AIK enables you to create preinstallation-environment (PE) images and migrate user profiles and data via the User State Migration Tool.
Microsoft's TechNet site has five videos covering step-by-step Windows 7 deployment with the AIK. Here's the first one: Create an Answer File.
